The Second-Meal Effect: How Your Dinner Impacts Tomorrow's Breakfast
Once we’ve finished dinner, washed the dishes, and gone to bed, we probably assume that meal is ancient history. Our metabolism, however, may have other plans.
Research into something called the second-meal effect says that what we eat at one meal may influence our blood sugar response to the next one. And in some research, dinner’s secret afterlife can last all the way until breakfast the next morning.
Your Dinner May Still Be on the Clock
Back in 1988, researchers gave healthy participants evening meals containing either high- or low-glycemic index foods.
The meals were designed to have the same nutrient composition, but researchers found an interesting difference the following morning. After everyone ate a standardized breakfast, participants had significantly lower blood glucose responses when they’d eaten the low-GI dinner the previous evening.
In other words, breakfast wasn’t starting entirely from scratch. Dinner was still having a say in what happened next.
Meet the Second-Meal Effect
The phenomenon isn't limited to that nearly 40-year-old experiment. Researchers have been studying versions of the second-meal effect for decades.
A 2009 paper says scientists first recognized the basic phenomenon, in which one meal reduces the rise in blood glucose after another. That study examined eight people with type 2 diabetes and found that their rise in blood glucose after lunch was considerably lower when they'd eaten breakfast beforehand.
Research has also examined what’s known as the overnight effect. One study of healthy women found that eating a low-GI evening meal resulted in lower glucose and insulin responses after breakfast the next day, compared with a high-GI evening meal.
So our bodies don't necessarily draw a neat little line under each meal when we've finished eating it.
Researchers Are Still Studying It
The second-meal effect hasn't been relegated to the nutritional history books, either. A small 2026 randomized study involving healthy Japanese adults compared several oat-based foods with white rice. Researchers found that all three oat products produced lower blood sugar after eating than white rice in one part of the study.
However, when researchers looked at the second-meal effect, only cooked oats reduced the glucose spike after the next meal. That's an important little wrinkle.
It doesn't mean that every bowl of oats, every high-fiber food, or every plate of low glycemic foods will automatically work some metabolic magic on whatever we eat next. Different foods, people, and meal combinations may produce different results.
Dinner Isn't Destiny
None of this means we need to spend tonight carefully engineering tomorrow morning's blood sugar. The studies are fascinating, but many have been small and conducted under controlled conditions. And our glucose responses can be affected by plenty of factors beyond what we ate at our last meal.
What the research does give us is an interesting glimpse at how connected our meals may be. We tend to think of breakfast, lunch, and dinner as three separate events, neatly divided by a few hours and perhaps a night's sleep.
But our bodies may not be quite so interested in our scheduling system. Dinner doesn't always clock out when we think it does.
